Esora
Born in Hiroshima, Chef Takeshi always had an inkling that he would pursue a career in the kitchen. As a kid around primary school, he was already interested in ‘small cooking’, and he had a fascination with making and creating things in general. His humble beginnings as an Izakaya cook in Kyoto during his university years, where he majored in Sociology, spurred him towards a higher level of excellence, leading him to a four-year tenure at the renowned three-Michelin starred Nihonryori RyuGin in Tokyo.
Chef Takeshi has a strong affinity with summer, the season during which he was born. He is drawn to the fresh produce that comes with this sunniest time of the year – unagi (freshwater eel), ayu (sweetfish), green yuzu, tomatoes and sweet corn. Chef Takeshi’s personal style has also been shaped by his years of cooking European cuisine – from his mastery of rustic, home-style Italian cuisine in Vancouver to the Japanese-inspired French cuisine in Tokyo.
